Ingredients
- 15 ml olive oil
- 1 onion, finely chopped
- 2 cloves garlic, chopped
- 250 g smoked bacon, chopped
- 1 red pepper, diced
- 1 green pepper, diced
- 1 yellow pepper, diced
- 15 ml mild curry powder
- 500 ml cooked basmati rice
- 30 ml chopped fresh thyme
- flaked sea salt and freshly ground black pepper
Method
- Heat the oil in a large pan and sauté the onion and garlic for 2 minutes until soft.
- Add the bacon and cook until slightly crispy.
- Add the peppers and cook for another 2 minutes.
- Add the curry powder and cook for a further 30 seconds.
- Add the cooked rice and thyme and stir until combined. Season to taste and serve warm.
