The prosciutto lends a savoury spin to what many palates experience as the bland but earthy taste of asparagus. As asparagus ‘soaks up’ flavour profiles very easily, this is a deft and wonderfully sneaky way to transform an often neglected vegetable into a delightful treat. It’s a great way to introduce the kids (in some cases, adult ‘kids’) to asparagus, too!

Prosciutto-Wrapped Asparagus

Prosciutto Wrapped Asparagus

  • 12 prosciutto slices
  • A bundle of 12 asparagus

Dipping sauce

  • 60 ml (4 tablespoons) sweet chilli sauce
  • 15 ml (1 tablespoon) soy sauce
  • 2 ml fresh ginger, grated
  • 1 ml wasabi paste (optional)
  • Micro-herbs, to garnish

Method

  1. To make the prosciutto wrapped asparagus: Preheat the oven to 190°C. Lightly line a baking tray with baking paper. Loosely wrap a prosciutto slice around the centre of each asparagus.
  2. Wrap the edges of each asparagus with foil and place the prosciutto ‘parcels’ on the prepared baking tray.
  3. Bake for 12 minutes until the prosciutto is cooked and crispy.
  4. Remove the parcels from the oven, take off the foil and discard the foil pieces.
  5. Place the prosciutto-wrapped asparagus on a serving platter.
  6. To make the dipping sauce: Mix the ingredients together and pour the mixture into a small serving bowl. Serve with the asparagus and garnish with micro-herbs.
