Oats and chia seeds
- 60 g (½ cup) rolled oats
- 40 g (¼ cup) chia seeds
- 2 green apples, rinsed and grated
- 5 ml ground cinnamon
- 500 ml plain thick yoghurt
- 250 ml milk (optional)
- 30 ml honey, to taste
Fruit toppings
- 100 g raspberries
- 100 g blue berries
- 50 g toasted coconut flakes
- 30 ml honey
- 80 ml berry sauce
Berry sauce
- 250 g raspberries
- 30 ml icing sugar
Method
- In a large jug, mix the oats, chia seeds, grated apples and season with cinnamon. Add the yoghurt, milk and honey. Stir the ingredients together so they are all mixed in. Allow to rest for a minimum of 4 hours or, preferably, allow to rest overnight.
- Serve the pudding in jars. Top with the honey, fresh berries, toasted coconut flakes and berry sauce.
- To make my Sibalicious berry sauce: Use 250 g fresh raspberries and place them in a food processor. Blend with 30 ml icing sugar. Now pass the blended mixture through a sieve to remove all the seeds and you’ll have beautifully smooth berry sauce, ready to serve!
