Ingredients
- 300 g boerewors
- 200 g lean beef mince
- 2 cloves garlic, crushed
- 10 g ginger, finely grated
- ¼ red onion, finely chopped
- 30 ml low-sodium soya sauce (Kikkoman)
- 20 g fresh coriander, roughly chopped
Sauce to toss in
- 60 ml tomato sauce
- 10 ml honey
Serve with
- A handful of celery sticks, baby cucumbers, cherry tomatoes, cheddar cheese blocks, peach slices (with a squeeze of lemon) as well as mango and butternut yoghurt, popcorns and some water.
Method
- Preheat the oven to 200 °C. Gently pull the boerewors out of its casing and place in a bowl. Discard the casing.
- Add the mince, garlic, ginger, onion, soy sauce and coriander. Mix well by hand. Roll into meatballs slightly smaller than the size of a golf ball.
- Place on a roasting tray and roast for 12 minutes, or until cooked through and golden.
- To make the sauce, heat the tomato sauce and honey in a large frying pan, along with some of the cooked meat juices for the roasting tray. Stir until the honey has dissolved.
- Add the meat balls into the sauce and toss them gently and then set aside to cool.
- Thread about 3 meatballs onto each skewer until all done and pack into a lunch box. Make sure the meatballs have cooled down before placing in a sealed container or lunch box.
- In another compartment place a handful of celery sticks, mini baby cucumbers, cherry tomatoes, cheddar cheese blocks and white flesh peach slices with a squeeze of lemon drizzled over its flesh to prevent it from discolouring. Along with a mango and butternut yoghurt, popcorns and some water. Place into a cooler pack and its ready to go!
